Goober Pies & Goober Cake

Punta Clara Kitchen says, the Goober Pie is "our version of a peanut butter cup: smooth, creamy peanut butter filling wrapped in rich milk chocolate.
Inspired by our Goober Pie, the Goober Cake is a delicious rendition of a peanut butter cup in a cake! Devil's food (chocolate) cake layers with peanut butter filling and chocolate buttercream icing."

INGREDIENTS:

For Goobers:

1½ sticks margarine

12oz creamy peanut butter

2T vanilla

1lb powdered sugar

STEPS:

Mix all together until smooth. Mixture will be stiff; add 1/3 cup water. Spoon into pastry bag and pipe into painted chocolate cups. Cover completely with chocolate.

This filling is used between layers in the Goober Cake

INGREDIENTS:

For Chocolate Buttercream Icing:

2 sticks margarine

2T shortening

1t vanilla

1t salt

1 cup cocoa, sifted

2lbs powdered sugar

Milk

STEPS:

Cream margarine, shortening, vanilla and salt. Sift cocoa and sugar in a separate bowl. Slowly add the sugar mixture to the margarine mixture, adding a little milk at a time to thin as needed.

Mix until smooth and spreadable.

This is used to ice the sides of the cake and to pipe around the base and decorate the top.

Our specialty candies are still made using old, treasured family recipes. We handcraft our candies in our kitchen just as we have for over 65 years.

Kim Clay is owner and operator of Punta Clara Kitchen in Point Clear, granddaughter of founder Dorothy Pacey. She's been involved with the business since she was a little girl, helping on weekends and holidays all the way through college. Then Kim came on board in a management role in mid 2000s and continues to manage with her dad, Paul Pacey. She can be found assisting customers, icing cakes, making jelly, washing dishes, doing the bookkeeping, or anything else that needs doing.
