Chocolate-Drizzled Pear Salad w/ Lemon-Rosemary Vinaigrette

It tastes SO good you'll think it's dessert. Skip Platt says, this nutrient dense salad packs a punch that is sure to delight holiday guests!

INGREDIENTS:

Salad -

3-4 cups spring mix salad

1 pear, unpeeled and sliced

1 teaspoon raw honey

1 tablespoon chopped fresh thyme

½ ounce bittersweet or 70 percent cacao chocolate

½ tablespoon of grass fed butter or ghee

Dash of cayenne pepper (to taste)

¼ teaspoon finely chopped fresh rosemary

¼ cup crushed walnuts

Lemon-Rosemary Vinaigrette -

Juice of ½ lemon

½ cup coconut oil or Bulletproof Brain Octane Oil (Or MCT Oil)

1 garlic clove, smashed

1 tablespoon or more of fresh rosemary, chopped

¼ teaspoon Dijon mustard

1 thick slice of pear (about 1 ½ inches)

Pinch of sea salt

Dash of ground pepper

STEPS:

1. Preheat the oven to 350 degrees Fahrenheit.

2. For the vinaigrette: In a blender, combine all the ingredients and blend until smooth. Set aside.

3. For the salad: Place the salad greens in a large bowl, sprinkle with crushed walnuts and set aside.

4. Arrange the pear slices on the baking sheet and drizzle lightly with the honey, then sprinkle with the thyme. Bake for 6-8 minutes until barely soft.

5. Meanwhile, in a small bowl set over a small saucepan of simmering water, melt the chocolate with the butter or ghee and stir in the cayenne and rosemary. Once melted and mixed remove from heat and let cool slightly.

6. When the pears are done, remove from the oven. To serve, toss the greens with the vinaigrette and divide between 2 salad plates. Top with the pears.

7. Using a spoon, drizzle the pears and salad with the melted chocolate.
