1 lb local Gulf Fresh Lump Crabmeat
1/2 cup Chopped onion
1/2 cup Chopped celery
1/2 stick Salted butter
1 pint Heavy cream
8 oz Velveeta cheese
4 T Flour
1/2 bunch Green onion, chopped
1/2 cup Shredded cheddar jack cheese
1 T Minced fresh garlic
1 T Garlic Powder
1 t Basil
1 t Acadiana Flavors cajun Seasoning
1/2 t Black pepper
Play some onions, celery in butter into your favorite 2 quart pot.
Saute until clear and tender.
Add all seasonings and salt a until well Incorporated.
Stir in flour until well blended.
Add heavy cream and bring to a low simmer stirring regularly for about 10 minutes.
Add Velveeta cheese and allowed to completely melt.
Remove from heat.
Add crab meat and green onions, gently folding until evenly mixed.
Spoon into oven safe dish and top with cheddar jack and a few more green onions.
Bake in 350 degree oven for about 10 to 15 minutes until nice and bubbly.
Serve with garlic bread in your favorite sides and enjoy.

About the Chef:
Gerald Ardoin is a native of Opelousas, La. He opened Cafe Acadiana in Silverhill in 2013, but for him - running a restaurant is nothing new. Chef Gerald began his food service career as a teen with his family in 1979. He was trained as a chef and business manager by his Father. Chef Gerald worked in the family business for 15 years before leaving to open an independent location in Opelousas, which was also called Cafe Acadiana. The Original Cafe was was in business for 9 years before being sold in 2003. Cafe Acadiana remained in business after the sale until 2012. Chef Gerald and his wife Christina moved to Baldwin County in January, 2004. They are raising two boys.
