Black-Eyed Peas with Conecuh

Don't forget your black-eyed peas for good luck and prosperity in the New Year! Lucy Greer adds Conecuh sausage for a delicious take on this New Year's Day staple.

INGREDIENTS:

1 lb. dry black-eyed peas 
1 lb. Conecuh sausage or any smoked sausage, cut into bite size pieces 
2 tsp. olive oil 
1 small onion, finely chopped
5 cloves garlic, smashed 
1 tsp. kosher salt
3/4 tsp. black pepper
2 bay leaves
4 cups chicken broth
2 cups water 

STEPS:

There are 2 methods to soaking your peas. Rinse dried black eyed peas in a colander under running water. 

Method 1: Pour rinsed peas into a bowl and cover with water. Make sure they are completely submerged by 3-4 inches. Cover and allow peas to soak overnight at room temperature.  Drain and rinse. 

Method 2: Pour rinsed peas into a pot. Cover with water by 3-4 inches. Bring to a boil and continue to boil for 2 minutes. Remove the pot from the heat, cover and soak for 1 hour. Drain and rinse. 

Heat 2 tsp. of olive oil in a pot over medium high heat. Add Conecuh. Cook for 5-8 minutes until nicely browned. Remove to a paper towel lined plate and reserve. 

Add onion to the pot and cook over medium heat for 5-8 minutes until onions are soft. Add garlic and cook for another minute. 

Add chicken broth, water, salt, pepper, bay leaves and drained and rinsed black eyed peas. Stir and bring to a boil. Reduce heat to medium low and simmer for 1-1.5 hours. Peas should be soft. 

Remove 1 cup of peas to a bowl. Mash with a fork and pour back into the pot of peas. Stir. This will help slightly thicken the peas. 

Add cooked Conecuh. Stir and allow to heat through for about 10 minutes. Serve over rice.
