Chicken Chop Suey

Ang Bahay Kubo says, "Most every culture has their own version of vegetable stir fry known as "chop suey", which was influenced by Chinese cooking. The methods for cooking chicken chop suey are generally the same. What makes each recipe different is the unique ingredients used in cooking.
Chop suey is a stir-fried dish of meat (pork or chicken) and vegetables. This vegetable dish is a popular everyday dish among Filipinos."

INGREDIENTS:

· 2 boneless skinless chicken breast (around 12 oz ), sliced thinly

· 1 tbsp corn starch

· 1 tbsp soy sauce

· 2 tbsp oyster sauce

· 2 tbsp garlic minced

· 1 med. onion chopped

· 2 cups cauliflower florets

· 1 cup celery, sliced

· ½ lb snow peas trimmed

· 1 small head cabbage sliced

· 1 red bell pepper seeded and sliced into wide strips

· 1 cup chicken broth or water

· 1 tbsp corn starch dissolved in 2 tbsp water

· Salt and freshly ground pepper to taste

STEPS:

1. Heat oil in a pan. Saute' garlic and onion, until onion is soft and wilted. Add chicken strips and cook until meat is browned and no longer pink.

2. Add all the vegetables, soy sauce and oyster sauce. Stir to combine and then add the broth. Bring to a boil, cover and let simmer for 5 minutes or until vegetables are crisp tender.

3. Give the corn starch mixture a quick stir and then add to the pan. Let mixture simmer until sauce thickens. Adjust seasonings by adding salt and pepper to taste.

Serve with steamed rice or garlic fried rice.
