Coffee Cake

INGREDIENTS:

2 tablespoons of organic coconut oil

½ cup Lakanto monkfruit sweetener or coconut palm sugar

2 eggs

½ cup unsweetened applesauce

½ tsp vanilla powder or vanilla extract

1 cup almond flour

½ tsp baking soda

½ tsp baking powder

2 pinches of sea salt

Topping Ingredients:

2 tbs Lakanto monkfruit sweetener or coconut palm sugar

½ tsp cinnamon

4 tbs chopped walnuts

STEPS:

Coffee Cake

1. Preheat oven to 350. Grease the dish(es) with a small amount of coconut oil

2. In a bowl using an electric mixer, mix together the coconut oil and sweetener of choice. Add the egg, applesauce, and vanilla and continue mixing to combine.

3. In a separate bowl, whisk together the almond flour, baking soda, baking powder and salt.

4. Add the dry mixture to the wet mixture and stir to combine. (Feel free to add other ingredients here for a chunkier consistency such as additional nuts/seeds, dark chocolate chunks, etc.)

5. Pour the batter into the prepared dish(es).

Topping

1. In a small bowl, whisk together the sweetener of choice, cinnamon and chopped walnuts. Sprinkle the mixture over the top of the coffee cake prior to cooking.

2. Bake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean.

3. Serve warm. (May also be individually heated as a quick breakfast on the go.)
