Coastal Fish Stew w/ Coconut Lime Broth

Chris Sherrill from COASTAL shares this dish of fresh seafood cooked in a very flavorful broth. It's a play off the classic Italian dish, Cioppino.

INGREDIENTS:

•    3 tablespoons olive oil
•    1 large onion, finely chopped
•    1 large fennel bulb, finely chopped
•    4 garlic cloves, coarsely chopped
•    Kosher salt and freshly ground black pepper
•    1 pint of heirloom tomatoes
•    1 1/2 cups dry white wine
•    1 can unsweetened coconut milk
•    juice of 3 limes and the zest
•    1 pound skinless fillets of monkfish cut into 1' pieces
•    1 pound mussels, scrubbed, debearded
•    1 pound large Alabama Gulf shrimp, peeled and deveined 
•    1 pound large sea scallops
•    1 pound clams
•    1 fresh jalapeno
•    1 jar of smoked cod roe
•    1 jar of spicy pickled peppers   
•    Cuban-style bread (for serving)

STEPS:

Saute the fennel, garlic and onion in the olive oil. Add the tomatoes. On medium high heat deglaze the pan with the white wine. Simmer for 5 minutes. Add the can of coconut milk and turn down to medium heat. Add the fresh clams and mussels and let simmer.

In another skillet, sauté the shrimp and brown the scallops. Deglaze the pan with lime juice and white wine…add the browned bits, the scallops and the shrimp to the pot of coconut broth. Reduce to low and check for salt and pepper.

Garnish with a bit of smoked cod roe and the spicy pickled peppers. Both items can be found at specialty food stores, but they are not required for this dish. Use big toasted Cuban bread to soak up the yummy juices.
