1/2 cup Trio Peppers (sm. Diced)

2 slices per. Green Tomatoes (1/3" sliced)
3 oz. Flour
3 oz. Egg Wash (eggs & water)

1/4 cup white wine vinegar

For Hollandaise Sauce:
Clarify the butter by heating slowly. When the solids are
on the bottom of the pan, the clarified butter will be on top.Let butter
cool till slightly warm.
In a small saucepan, heat the vinegar and wine with the shallots,

Form out into 2 oz. Disks and brown on griddle or sauté pan. Place in 350 oven for 3-5 min. or until done.
Crust 1 slice tomato by dipping into flour, eggs and then cornmeal. Deep fat fry at 350 till golden brown 2-3 min.
Poach Quail egg partially and reheat when readyto serve.
Garnish and serve.
