1 lb of 16-20 Shrimp, peeled and deviened with head on
2 T. Olive Oil
1 Lemon Quartered
5 T. Unsalted Butter
2 Oz. White Wine
4 cups of water
1 cup of grits
½ cup smoked gouda grated
Salt and Pepper to taste
Tasso Creole cream sauce, recipe follows
Heat saute pan over medium high heat and add olive oil.
Season shrimp with salt and pepper, add shrimp to sauté pan cook for 2 minutes on each side, remove from heat and add white wine. Steam shrimp for 3 minutes in wine. Stir in juice of lemon and 3 tablespoon of butter.
While shrimp is cooking, bring water in a separate pot to a boil and add grits. Once cooked, add smoked gouda cheese and season with salt and pepper to taste.
To serve, ladle grits into a bowl and top with shrimp and Tasso Creole corn cream sauce.
INGREDIENTS: Tasso Creole Corn Cream
4 oz Tasso Ham (diced)
1 Ear Sliver King Corn (shucked and Washed)
1 Each Tomato
1 Each Green Bell Pepper
1 Each Yellow Bell Pepper
1 Bunch Green onions
1 T. Shallots
1/8 cups Parsley, chopped
1 T. Garlic,
1 T. White wine
¼ Cup Cream
Shave corn off the cob, dice tasso ham, julienne tomato, bell peppers, finely chop green onions, shallots, garlic, parsley.
Heat sauce pan over medium high heat add olive oil.
Place all ingredients into sauce pan
Stirring frequently, cook for 5 minutes add white wine, cream and Creole mustard reduce to simmer for 5 minutes. Adjust seasoning with salt and pepper.

Alabama’s Food Network Star, Martie Duncan, will host this year’s Seafood, Science and Celebrity at the Dauphin Island Sea Lab and Estuarium on Saturday, November 2. Brody Olive is Director of Food and Beverage/Executive Chef for Spectrum Resorts in Gulf Shores. He is a 2-time Shrimp Festival cook-off winner and 2008 Gold Medalist in the Southern Breeze Chef Challenge.
He cut his “culinary teeth” under Executive Chef and Restaurant Owner of Ocean Restaurant in Birmingham Alabama, George Ries. Olive studied Culinary at Johnson and Wales in Charleston, SC.
