INGREDIENTS: Bread Pudding
3 baguettes (day old works best)
5 cups sugar
4 cups milk
2 tbs vanilla
INGREDIENTS: Drizzle and sauce
½ lb (2 sticks) butter
2 cups brown sugar
1 cup heavy cream
Strawberries and blueberries sprinkled with sugar
Preheat oven to 350 degrees.
Cut baguettes into one inch cubes and place in a 9 x 9 baking pan
Whisk eggs, sugar, milk, and vanilla together in bowl until smooth. Pour over baguette cubes ensuring the cubes are completely soaked (This is best done by allowing the bread to soak overnight in the refrigerator)
As the cubes soak, prepare the brown sugar drizzle by melting the butter in a sauce pan on low-medium heat and adding the brown sugar. Whisk the mixture until the sugar is dissolved and slightly bubbling. Drizzle over the bread, but do not coat the bread. Put the remainder of the brown sugar mixture to the side.
Place the pan into a water bath and put into 350 degree oven for 50 minutes.
While bread is baking, prepare brown sugar sauce by heating the remaining brown sugar mixture on low and whisking in heavy cream. Add heavy cream until the mixture is syrupy and flows easily off the whisk.
When bread pudding is finished baking, remove from oven and water bath. Allow to cool completely.
When ready to serve, reheat portion in 350 degree oven for about 1 minute and top with about 1 ounce brown sugar sauce and add strawberries and blueberries.
Makes about 9-12 servings.
