2 8oz Snapper Filets
½ cup white wine
¼ cup chicken or fish stock
½ cup julienned white onions
½ cup diced tomatoes
¼ cup butter
¼ cup vegetable oil
½ cup fresh peas
4 Yukon gold potatoes
½ cup cream
¼ # butter
½ cup All Purpose flour
2 Green onions finely chopped for garnish
Boil potatoes, drain, add cream, butter, salt & pepper to liking (hold until ready)
Pre-heat sauté pan over medium heat with oil
Season fish with salt & pepper- lightly dust with flour
Sauté fish for approximately 4 min each side until firm
Remove fish from pan, drain excess oil
Add onions, garlic, tomatoes, lightly sauté until translucent
Add white wine, reduce by ½ then add stock and reduce by ½ again
Add fresh peas and warm throughout
Remove from heat- stir in ¼ cup butter to thicken sauce
Place mash potatoes in bowl- place fish upon mash potatoes
Pour sauce over the top and garnish with chopped green onions and serve

About the Guest:
Executive Chef Dennis Moore graduated from Johnson and Wales in 1994. He served as the executive chef at several notable restaurants such as "The River House in Palm Beach, Florida; "Copeland's in New Orleans, Louisiana and "Bubba Gump Shrimp Co." He is now the executive chef at "Flounder's Chowder House."
