2 to 3 Filets of fish (Salmon or firm white fish such as Mahi mahi)
Red onion, finely diced
Dust each side of fish liberally with garlic powder, paprika and salt. Cook over a grill or sauté pan until done, approximately 3 to 5 minutes on each side.
While fish is cooking, heat another sauté pan over medium heat. Warm corn tortillas and wrap in aluminum foil until ready to serve.
Once fish is cooked, break apart or chop into large chunks. Place in corn tortillas, sprinkle with onions and cilantro. Serve with wedge of lime to squeeze over taco before eating.
