1 6oz Filet
1/4 cup of Fig demi
1/2 cup green been, cooked
1/8 lb Lump crab
1/8 lb Jumbo lump crab
1Tbs Aioli or mayonnaise
2 Green onions chopped
1 Tsp Old Bay seasoning
1 Tsp Worshershire
1 Tsp dry mustard
Fresh lemon juice
To make crab cake – gently combine crab meat, egg, aioli or mayonnaise, green onions, Old Bay seasoning, Worsheshire sauce, dry mustard, squeeze of lemon juice with enough crackers to bring together the cake. Mold into 4 oz cake and sear.
Cook filet to desired doneness. To serve, place crab cake under cooked filet, place green beans on top and sauce with fig demi.
