9 eggs2 cups broccoli, cut into small florets1/3 cup red onion, finely chopped1 red bell pepper, finely chopped1 tsp. Dijon mustard1/4 cup feta cheese, crumbled1/4 cup cheddar cheese, shredded1 tsp. kosher salt1/4 tsp. black pepper
In a microwaveable safe bowl, combine broccoli, onion and bell pepper. Pour 1/4 cup water over the vegetables. Cover tightly with plastic wrap. Microwave 3 minutes. Drain.
In a large bowl, crack 9 eggs. Add Dijon, salt and pepper. Whisk. Add drained vegetables, feta and cheddar. Stir until combined.
Spray 8x8 baking dish with non stick cooking spray. Pour mixture into the dish. Bake at 350 degrees for 25 minutes.
