Dale's Cook-Off: Bacon Wrapped Venison w/ Smoked Gouda

 

Our Dale's Seasoning Cook-Off is back! Fox 10's Hustlin' Hal Scheurich brought the flavor, with thinly sliced venison and bacon wrapped around asparagus and smoked Gouda cheese.

INGREDIENTS:

2 lbs. venison or beef tenderloin (sliced into 1/4 inch sliced and tenderized)1 pkg thick sliced baconSmoked Gouda cheese (cut into 1/2 inch by 4 inch strips)1 bunch of asparagus (rinsed sand cut into 5 inch pieces - discard the stem ends)1 bottle Dale's (low sodium - 16 oz.)2 6 oz. cans pineapple juice1 Tbsp black pepper

STEPS:

Combine Dale's, pineapple juice, meat and asparagus in large bowl and refrigerate for 1/2 hour.Wrap asparagus and Gouda cheese strips with tenderized meat.Wrap meat with bacon and use two toothpicks to hold together.Sprinkle each wrap with black pepper to taste.Place on baking pan and into a 400 degree preheated oven for 30 minutes. Broil last 5 minutes and remove. (Check regularly during the broiling process as to not overcook bacon.)Remove and serve with your favorite side.
