It's time for the Dale's Cook-Off, y'all! This is the seventh year for our cooking throwdown in the Studio 10 kitchen. Three contestants face off to see who can create the most delicious dish using Dale's Seasoning. The winner gets bragging rights, and of course, the coveted Dale's trophy!
This year, we're kicking off with two-time winner and reigning champ, Hal Scheurich! Hal is also our Baldwin County reporter here at Fox 10. He's starting the contest strong, making a Dale's-injected pork loin wrapped in bacon.
Our two Studio 10 co-hosts will get their shot over the next two Thursdays, with first-time competitor Chelsey Sayasane and cook-off veteran Joe Emer bringing their best Dale's recipes to the table.
DALE’S MARINADE–INJECTED PORK LOIN

- 1 large pork loin, cut in half
- 1 pkg. Conecuh thick sliced bacon
- 1 cup Dale’s (reduced sodium) marinade
- 1 ½ cup apple juice
- 1 tsp liquid smoke
- 2 tbsp Play House Spices – Old Dauphin Way spice blend (playhousespices.com)
- 12 cloves peeled garlic
- Fresh thyme
Rinse and pat dry pork loin.
In mixing bowl, combine Dale’s, apple juice and liquid smoke (whisk together).
Inject pork loin thoroughly.
Insert small knife to create pockets for garlic cloves and thyme (10 to 12, spread out evenly).
Drape 3 to 4 slices of bacon (lengthwise) across pork loin, then cross over the top with 4 to 5 additional slices (tuck ends of bacon under loin).
Coat top of bacon-wrapped pork loin with Old Dauphin Way spice blend (rub in to coat evenly).
Preheat oven to 375 degrees. Place cooking rack on top of oven tray and add pork loin. Cook uncovered for 1 ½ hours.
