Chef Nino from Rouses is whipping up a skillet dish with meat, veggies and lots of Mediterranean spices, served in a pita.
1 pound ground lamb, beef, or turkey
1 white onion, very finely chopped
1 bell pepper, very finely chopped
8 cloves garlic, peeled and chopped finely
3 tbsp. finely chopped flat-leaf parsley
1 tablespoon finely chopped fresh mint leaves
2 tablespoons fresh cut cilantro
2 teaspoons ground cumin
1 tsp ground paprika
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
½ tsp ground cinnamon
½ tsp ground allspice
½ tsp cayenne pepper
1 /2 tsp ground ginger
2 tablespoons tomato paste
1. Mash the garlic into a paste with the salt, using a mortar and pestle or the flat side of a chef's knife on your cutting board. Chop finely.
2. Mix the garlic into the meat along with the onion, bell pepper, parsley, mint, cumin, cilantro, paprika, garlic powder, black pepper, cinnamon, allspice, cayenne pepper, ginger and tomato paste in a mixing bowl.
3. Sauté in a medium skillet and keep stirring until meat is browned, about 20 minutes.
