Lucy from Greer's Markets shares a quick and delicious recipe to help with your healthy eating goals for the new year! It's also a great dish to meal prep and eat throughout the week.

INGREDIENTS:

  • 12 oz whole wheat spaghetti
  • 1 rotisserie chicken
  • 1 head broccoli, cut into florets
  • 1 pt grape tomatoes
  • 2 lemons, zest and juice
  • 1 cup reserved cooking liquid
  • 2 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes

STEPS:

Remove chicken from the bones and chop. Reserve.

Bring a large pot of salted water to a boil. Add spaghetti to the pot. Cook for 6 minutes. Remove 1 cup of water and reserve. Add broccoli and cook for another minute. Drain pasta and broccoli.

Add olive oil to the pot and turn heat to medium low. Add tomatoes, lemon zest, lemon juice. Add cooking liquid, kosher salt, garlic powder, black pepper and red pepper flakes. Add cooked pasta, broccoli and chicken. Toss until well combined.
