This creamy, melty mac n' cheese from Lucy Greer is sure to be a crowd pleaser during the holidays or any time!
16 oz penne pasta, or any short pasta 16 oz Velveeta cheese, diced4 oz cream cheese, softened1/2 cup sour cream2 cups half and half1/2 stick butter 1 cup sharp cheddar cheese, shredded 1/2 cup flour 3/4 tsp. kosher salt
Boil pasta according to package instructions, 8-9 minutes. Meanwhile, make the sauce.
Melt butter in a large pot or skillet over medium heat. Whisk in flour and cook for 1-2 minutes. Slowly pour in half and half whisking constantly.
Once sauce is combined, add cream cheese. Stir until melted. Add Velveeta and stir until melted. Add sour cream and salt. Stir until combined.
Add drained and cooked pasta to sauce. Stir until combined.
Spray a 9x13 baking dish with nonstick cooking spray. Pour pasta and sauce into the baking dish. Top with shredded cheddar.
Bake at 400 degrees for 20 minutes until brown and bubbly.
