Tuscan Chicken from Walk-On's

 

Walk-On's Bistreaux & Bar features the Tuscan Chicken on Studio 10--blackened chicken topped with warm tomato basil salsa over rice, veggies and garlic bread. They also show off more delicious dishes Walk-On's has to offer!

INGREDIENTS:

Tuscan Salsa

2 oz. (bv) Olive Oil 1 oz. (bv) Balsamic Vinegar ¼ tsp. Kosher Salt A Pinch Coarse Black Pepper ½ tsp. Chopped Parsley ½ tsp. Chopped Garlic 8 medium size Basil Leaves 16 oz. (bv) Roma tomatoes

Green Beans

1 lb. Fresh Green Beans½ tsp. Salt and Pepper½ Gal. Water

Tuscan Chicken

4 5 oz. Chicken Breasts2 tbsp. Blackening Seasoning2 oz. (bv) Oil12 oz. (bv.) Tuscan Salsa6 oz. Cooked White Rice

STEPS:

1. Take the roma tomatoes and wash them thoroughly. Then decore and cut into 3/8” cubes. Place to the side.2. Chiffonade the basil leaves and set aside.3. In a mixing bowl mix the remaining Tuscan Salsa ingredients thoroughly with a whisk.4. Add the cubed roma tomatoes and basil. With your hands gently mix the ingredients until all ingredients are incorporated.5. Place in fridge for at least an hour to chill.6. In a large sauce pot bring water to a rolling boil. Add the green beans.7. Wait until the water comes back to a boil and then let the green beans cook for around 3:30 or until slightly tender.8. While bringing the water to a boil begin cooking the chicken.9. Take the chicken breasts and generously season with blackening seasoning. 10. Place in a hot skillet with oil. 11. Cook for 3½ minutes (DON’T TOUCH IT – this will allow for a good sear to form).12. Flip breast after 3½ minutes and continue cooking for an additional 4 to 5 minutes or until firm to the touch and 165°F.13. Place the Tuscan salsa in a sauté skillet and slightly heat to 100°F degrees. 14. Place cooked rice on a plate. Place the cooked chicken on top, and lay the Tuscan salsa on top.15. Get the green beans and mix with the salt and pepper and place on plate.
